INTRODUCTION

ppt/slides/slide4.xml

PURPOSE To evaluate, compare and analyze menus from different nursing home facilities and suggest revisions for healthier food choices based on the two chosen cultural cuisines (American and Hispanic cultures) and age group (25+ years of age).

APPROPRIATENESS for nutritional requirements of selected age group? RATIONALE The rationale on why this menu is appropriate for the older adult population is because it does include a variety of foods (a suggested requirement). Also, it includes the RDAs (recommended daily allowances) for this population. To provide independence of the patient (with dexterity challenges), it would be better to have the same menu items, but in more of a “finger-food” like fashion for this patient. This menu is appropriate for the nutritional requirements of the Older Adult population (65+). However, in this population, at the facility type chosen, there is a strong possibility that there are individuals residing in this community that have dexterity challenges. This menu is appropriate for nutritional requirements of these individuals also, but not for if they have dexterity challenges.

Is menu #1 a balanced diet for this age range? Daily , menu #1 (Brightview Senior Community) is a balanced diet for this age range. It contains macronutrients, micronutrients, vitamins and minerals. The daily RDAs for the older adult, for this menu are as follows: 1-week? For 1-week, menu #1 (Brightview Senior Community) is a balanced diet because it contains a variety of different healthy foods, in addition to the carbohydrates, p ro teins, fats, minerals and vitamins.

ppt/slides/slide10.xml

Is menu #1 influenced culturally & regionally? Yes. Menu #1 is supposed to be influenced by the American culture cuisine, and it is. Rationale: It contains foods native (and natively grown) to the United States of America. The foods on this menu are staples of the American diet; meaning, many Americans have grown up eating these foods in their household. This is important being that this facility is in the Eastern region of the United States of America.

ppt/slides/slide11.xml

Does menu #1 contain the 6 major nutrients? Yes, it does {0505E3EF-67EA-436B-97B2-0124C06EBD24} Nutrient Yes No Carbohydrates 3% Fats 16% Proteins 31% Vitamins A, C, B12, A Minerals Potassium, Calcium, Iron Water Yes

ppt/slides/slide12.xml

Does the diet in menu #1 allow for diversity in dietary patterns (in relation to culture & age)? Yes, the diet in menu #1 (Brightview Senior Community) does allow diversity in dietary patterns in relation to culture because there are foods on the menu that fit in other cultures than the American culture (Matzo balls/Jewish, and Black Bean soup/Mexican) This menu also does allow for diversity in dietary patterns in relation to age because there are foods that the younger adult, middle adult, adolescent and the toddler would enjoy (butter noodles, French fries, potatoe wedges, and turkey)

ppt/slides/slide14.xml

MENU #2 ANALYSIS HEALTHY SELECTIONS Paella Yellow Rice Scandinavian Vegetable Blend Wheat Dinner Roll/Bread with Margarine Pot Roast UNHEALTHY SELECTIONS Fruit Cocktail

ppt/slides/slide15.xml

APPROPRIATENESS for nutritional requirements of selected age group? RATIONALE Menu #2 (Complete Care Nursing Home) is appropriate for the required nutritional requirements of the older adult age. Menu #2 (Complete Care Nursing Home) contains some of the RDAs recommended for the older adult age range. However, I did notice that depending on how some of the items are prepared, can determine if the menu is appropriate or not. For example, the fruit cocktail. If the fruit cocktail is in heavy syrup, it will exceed the recommended <10% RDI for sugar.

ppt/slides/slide16.xml

Is menu #2 (Complete Care Nursing Home) a balanced diet for this age range? Daily, menu #2 does consist of a balanced diet for this older adult age range. It contains macronutrients, micronutrients, vitamins and minerals, which are all important in the prevention of disease in this age range. 1-week ? For 1-week, menu #2 does consist of a balanced diet for the older adult age range. According to the Healthily Eating Plate model, as long as the following portion sizes are followed, the diet is balanced: vegetable (1/2 of the plate) and fruit portion size contains ½ of the plate, whole grains make up ¼ of the plate, and proteins the last ¼ of the plate (plant oils in moderation, skipping sugary drinks and limiting milk and dairy products).

ppt/slides/slide17.xml

Is menu #2 influenced culturally & regionally? Yes, menu #2 is influenced culturally and regionally. Rationale: It contains Hispanic cuisine (paella rice), and also American cuisine options (pot roast), being that this facility is in the Eastern region of the United States of America.
